London has no shortage of parlours selling frozen treats, from the city's many gelaterias to the mushrooming crop of fro-yo (frozen yoghurt) bars. None strays too far from convention, all being perfectly lovely places to cool down during hot summer days. However In Chin Chin's kooky ice-cream parlour, which looks like a mad scientist's lab, they use liquid nitrogen to make ice creams on demand. There are no tubs of frozen ice cream displayed behind glass, ready to be scooped and stacked into waffle cones. Instead, colour-coded work stations and connecting steel beams enclose three pristine KitchenAid stand mixers, drinks dispensers (like those used for 'slushie' drinks) filled with custardy ice cream bases and a large dewar (flask) of liquid nitrogen looming ominously behind the front door. Place your order and on go the staff's safety goggles and cryo gloves. They all wear white lab coats at all times. To know the truth try it yourself.
